Cauliflower Puree with Chives

I love potatoes almost as much as I love pasta but I am continuing on this weight loss journey so I'm cutting down on the carbs, certainly not cutting out! Cauliflower is a great substitute for mashed potatoes, when pureed they are creamy and delicious! I keep mine simply seasoned with salt, pepper, garlic powder, a little butter, a little light cream and then to thicken it up a bit, a few Tbsp of dried potato flakes. I finish this dish off with chopped chives. You will not miss the potatoes one bit!

Cauliflower Puree with Chives
serves 4-5

1 large head of cauliflower, core removed, rough chop
2 Tbsp unsalted butter
1 Tbsp light cream
1 tsp garlic powder
2 tsp chopped chives
3 Tbsp dried potato flakes
salt & pepper


Cook the chopped cauliflower in boiling water until tender. Drain and return to pot. 

Add in all the ingredients except for the chives. Using an immersion blender, puree until smooth. If you feel it is too loose, add another Tbsp of the potato flakes, if you want it a little looser then add a bit more cream.

Stir in the chopped chives. Taste for seasoning. In my opinion, cauliflower needs a generous amount of salt to enhance the flavor.
